We get the early variety of Timperley rhubarb, known for its delicious sweet but ripe profile, from a family farm in Norfolk, England.
The strong North Sea breeze and the abundance of rain ensure the perfect growing conditions.
Rhubarb is harvested by hand between April and May and processed in a few hours to ensure maximum freshness of the aroma and flavors in the natural aromas of rhubarb in our tonic water.
SCOTTISH RASPBERRY (Rubus Idaeus) STRATHMORE VALLEY, Scotland
We get raspberries from Scotland's famous Strathmore Valley, which provides the perfect growing conditions for soft fruit. Scottish raspberries were selected for this tonic because of their sharper flavor profile compared to the sweeter varieties, often from sunny climates.
Raspberries are processed using traditional steam distillation, the process takes place within a radius of 10 km from where they were harvested by hand, to ensure the freshness of the flavor in the natural raspberry flavors used in our tonic. Secondary fruit puree is collected and used in the production of other foods to improve efficiency and reduce food waste!
